This is one of our favorite meals to eat fresh from the garden.
Cook fresh green beans al dente, drain and toss with several chopped cloves of garlic, lemon juice, salt, pepper and a tiny bit of extra virgin olive oil. Alternately, add chopped garlic, and sprinkle vinaigrette dressing on top.
Place on top of fresh lettuce. Sprinkle with feta or blue cheese, if desired. Top with some freshly chopped tomatoes.
Can be set aside for up to 15 minutes before serving.
