Ingredients

ground meat - your choice
salsa
chips
cheese - your choice but something that melts well is best.
Then found a package of turkey sausage, ground. I browned that and chopped it into crumbles.
Then in a casserole type dish I put the potatoes in, dish greased with olive oil. Then put the browned meat on top. Then covered it with salsa.
Then I crumbled some blue corn tortilla chips over it and grated some cheese on top. I think it was colby jack or something like that.
I used salsa because I like salsa and, it has enough flavor that you don't need to add any spices to the dish.
I stuck it in the oven at 400° I think, for about 45 minutes.
I'm sure there's a better way to cook it. The cheese on top was overdone a little... maybe covering it? And the potatoes could have been cooked a HAIR longer but were still good.
Everyone loved it. My wife had some for breakfast the next morning and even liked it cold.
We will likely make it again, or something similar.
