Yummy salads

i am a HUGE salad fan. here are a few of my favorite recipes.

Tomato and Corn-Chip salad:

Salad:
1 head iceberg lettuce, torn into bite sized pieces
3 small tomatoes, chopped
1 (15 oz) can dark, red, kidney beans, rinsed and drained
1/2 cup shredded, sharp cheddar cheese
1 cup coarsely crushed corn chips

Dressing:
1/2 cup cider vinegar
1/2 cup vegetable oil (or substitute of choice)
1 (0.7 oz) package italian dressing mix




Triple Bean Salad:

1/2 cup natural sugar
1 medium onion, thinly sliced
1/4 cup chopped green pepper
1 teaspoon celery seed or celery salt
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup vineger
1/4 cup oil
1 tablespoon soy sauce (optional)
3 cans (16 oz each) beans*, drained and rinsed

In a large bowl, combine all ingredients; mix well. Cover and refrigerate several hours.

yeilds 8-12 servings

133 colories, 3g protein, 19g carbohydrates, 6g fat, sodium 367mg, potassium 172mg.

*cooked green, yellow, red kidney, garbanzo, lima, or soy beans may be used.




Minty Melon Bowl:

2 cups honeydew melon balls
1 cup green grapes
8 oz. can (1 cup) pineapple chunks, drained
1 cup cubed, fresh pears
1/4 cup apple-mint or mint jelly

In a salad bowl, combine all ingredients except jelly. Melt jelly or stir with fork until soft; pour over fruit. Toss lightly. Cover and chill. If desired garnish with fresh mint leaves.

yields 6 servings

108 calories, <1g protein, 28g carbohydrates, <1g fat, 11mg sodium, 261 mg potassium

The tomato and corn chip salad sounds pretty good! Of course, I always like a little taco meat in a salad... yummm... but I guess I shouldn't be talking about taco meat on millipede's healthy eating forum. :)

ya, the corn chip salad is my fave.
my gram taught me how to make it :)

Those recipes could use just a little tweaking to fit my diet... but don't look too bad.
