unnamed casserole?

Postby millipede » Sat Oct 15, 2011 3:30 pm

I don't know what to call it. I made dinner last night. I was not sure what I was going to make so I looked to see what we had. Here's what I ended up doing...

Ingredients
    potatoes
    ground meat - your choice
    salsa
    chips
cheese - your choice but something that melts well is best.

I rinsed 10 small potatoes(a little bigger than golf ball sized) and chopped them up into about 8 pieces.
Then found a package of turkey sausage, ground. I browned that and chopped it into crumbles.

Then in a casserole type dish I put the potatoes in, dish greased with olive oil. Then put the browned meat on top. Then covered it with salsa.
Then I crumbled some blue corn tortilla chips over it and grated some cheese on top. I think it was colby jack or something like that.
I used salsa because I like salsa and, it has enough flavor that you don't need to add any spices to the dish.
I stuck it in the oven at 400° I think, for about 45 minutes.
I'm sure there's a better way to cook it. The cheese on top was overdone a little... maybe covering it? And the potatoes could have been cooked a HAIR longer but were still good.
Everyone loved it. My wife had some for breakfast the next morning and even liked it cold.
We will likely make it again, or something similar.

That sounds good...and easy; I may try that!

wow... someone replied. :)
Let me know how it comes out if you try it. We plan on trying it again at some point but it could end up with just plain ground turkey or something next time. We'll see.
Maybe the next time I make it I'll have a name for it. I posted a link to this topic on facebook asking friends to help name it... Only had one person respond so far.

LOL I've not been on here for a very long time...I'm not good at naming food creations though, so maybe someone else will have an idea for it!
