Homestyle V8 juice

Homestyle V8 juice

25 pounds tomatoes
3/4 cup diced carrots
3/4 cup chopped celery
3/4 cup chopped bell peppers
1/2 cup chopped onion
1/4 cup chopped parsley
1 Tbsp. salt (optional)

Remove core of tomatoes and cut into large chunks. Combine with other ingredients in large pot and simmer, stirring often. Simmer 20 minutes. Run through a food mill or sieve to remove skins and seeds of tomatoes and mash other vegetables. Add salt. Reheat juice to 190 degrees. Pour into hot pint or quart jars. To each quart, add 2 Tbsp. lemon juice; to each pint, 1 Tbsp. Leave ¼ inch of head space. Process pints for 35 minutes and quarts for 40 minutes in a hot water bath.

Thanks for the recipe. Sounds good. Always nice to have home made alternatives and they're usually healthier. I've also read that V8 is GMO

Millipede,

This was my mom's recipe. She used to make this every summer when we were swamped with tomatoes. It's great knowing all winter long you can have home grown tomatoes.

The original V8 contains no onions or green peppers; it contains tomatoes, carrots, celery parsley, beets, lettuce, spinach and watercress,

Mom used to use her V8 as a base for a great veggie soup, but the ingredients in the soup were whatever she had on hand, so I don't have a recipe. Just throw in veggies, plus beans, lentils, rice, noodles or whatever you like in soup. Cook thoroughly and serve with homemade bread and unsalted butter. ;)

MMMMMMMMMM I love V8 juice! I am going to have to try it. Maybe cut the recipe in half then you wont have so much... Im the only one in my family that likes V8 juice. I think the sour..er..."?" it is the better...

Wow, I just reinvented the wheel....LOL....I call mine V9 because it does V-8 one better by being raw! But I like the fact that yours can be canned and so convenient - just whip out a jar.

Anyway, a former employee of mine was a truck driver before he worked for me. He would often deliver to some V8 facility and he said the tomatoes etc were delivered in dump trucks and were really, REALLY gross - just about rotten. Well of course they're not going to use their most fresh tomatoes to make juice. But after seeing that, he won't touch the stuff! Now, this was years ago. Maybe - I hope anyway - that with inspections and regulations the way they are it's not quite as gross as it used to be.

Thanks for sharing. I didn't know that regular V8 was GMO.....They do also have organic though, which because it is certified, cannot use any GMO products. But even so, it's probably "factory farmed" where the soils would not be as good as what you'd obtain from your own garden etc......

I wonder if CB will still like V8 after reading that?

I'll try that recipe out one of these days, but I don't think I'll start with 25 pounds of tomatoes

I just kind of throw mine together, so the recipe is never exact. I believe we all need to add WAY more greens to our diet, so I really pile in the greens, so my V9 goes something like this:

7 tomatoes
handful of parsley
2 celery stalks
1/3 red pepper
1 apple
1 carrot
3 large kale leaves, collards, beet greens etc.
1/2 - 1 clove garlic to taste
1/6 of a cabbage...

Use your juicer for all this. Add salt and pepper if desired. I sometimes add Mrs. Dash....I've been too afraid to check, but now I just know someone is going to tell me Mrs. Dash is GMO....Oh pls say it ain't so!!!

I have no idea if Mrs Dash is GMO or not...
We need to get a new juicer. Last time my wife tried to use ours it started smelling funny and wasn't working right.
